












 
Bake at 400 degrees for 13-18 minutes. 
Makes 24 muffins.  
Crumble Topping
½ cup sugar
1/3 cup flour
2 teaspoons cinnamon
4 tablespoons cold butter, cut into small cubes
Muffins
Mix together well:
¼ cup oil
¾ cup unsweetened applesauce
2 eggs
2/3 cup milk
Mix together and add to wet mixture:
2 cups whole wheat pastry flour
1 cup white flour
1 ¼ cups sugar
¾ teaspoon salt
4 teaspoons baking powder
1 teaspoon cinnamon
Stir In:
2 ½ cups blueberries
Step One: To Prepare the Crumble Topping: Start by mixing together the sugar, flour and cinnamon. Then cut in the cold butter until the entire mixture resembles coarse crumbs. Set the crumble aside for later.
Step Two: Mix together the oil, applesauce, eggs and milk.
Step Three: In a separate bowl mix together the flours, sugar, salt, baking powder and cinnamon.
Step Four: Add dry ingredients to the applesauce mixture and mix well.
Step Five: Stir in the blueberries.
Step Six: Line muffin cups with paper liners and spray liners with Pam Baking spray. Fill muffin cups 3/4 full.
Step Seven: Sprinkle the muffins with the crumble topping mixture.
Step Eight: Bake for 13-18 minutes at 400 degrees. (Note: my oven seems to cook hotter than some, so adjust the cook time to your oven.)
